Mankato State University in Mankato, Minnesota had not had a dining facility upgrade in years. As the college’s student population grew, this became a bigger issue and a daunting task, but in 2016 they began work on a new, state-of-the-art facility that would meet their needs and more with the help of Boelter as their equipment supplier and installation team.
In conjunction with the designer, Boelter laid out their plan for better kitchen flow and efficiency to make sure all students were able to eat in a timely manner. With a strict university schedule, this was not a task to be taken lightly. It was determined that an open concept kitchen with multiple food stations would be the most practical. Students could spread out throughout the dining hall both for food and for seating. This would prevent roadblocks and congestion.
